Peppermint Crisp Fridge Tart

So I know it's strange that I'm posting dessert first but trust me, you'll be glad I did because then you can get it out of the way and in the fridge to set while you prepare Christmas lunch.

It's a pretty easy dish to make with about an hour or so of prep time and then about 4 hours needed for it to set. Also, the ingredients are verrrrry easy to get and not that many or expensive. Well here goes...

Ingredients:

Fresh Cream (250g)
Caramelized Condensed Milk (375g)
1 1/2 packets of Tennis Biscuits
Up to 3 bars of Nestle Peppermint Crisp Chocolate
3-4 drops of Peppermint Essence
Castor Sugar (20ml)

Method:

1. Crush the Chocolate bars

2. In a separate bowl, whip the fresh cream into soft peaks (alternatively you could use Orley Whip)

3. Add the condensed milk, castor sugar, peppermint essence and 3/4 of the crushed chocolate to the whipped cream and mix well

4. In a buttered dish, place a layer of the tennis biscuits till the bottom is completely covered.

5. Spoon a bit (about 1/3) of the cream mixture onto the biscuits and spread until it covers them evenly

6. Repeat the process until the last of the mix is the top layer.

7. Sprinkle the leftover chocolate bits over the top layer of the mix.

8. Cover it up and refrigerate for 4 hours.

9. Cut into squares and serve once your tart has set.
