Honey and Lemon Chicken

Ridiculously easy to prepare and absolutely delicious, this is one of my most favourite meals to prepare. The ingredients are easy to get and probably already available in your cupboard and it is a good, healthy-ish meal to make. It is also a perfect meal for working moms (or dads, whoever is cooking really) who want to throw together a quick, nutritious dinner for the family.

Ingredients:

Chicken pieces
Honey
Lemon
Cooking oil (preferably olive or canola)
Salt & Pepper/Spices (to season)
Garlic (optional)
Herbs (optional)

Method:

1. Preheat your oven.
(Personally I tend to set it to 180°C but whatever you feel comfortable with should be fine).

2. Wash the meat very well and set it aside to drain or dry a little.

3. In a bowl, mix the lemon, honey, oil and seasoning together.
(You can make as much or as little as you'd like depending on the amount of chicken you're making). (You can also add the garlic and/or herbs if you'd like).

4. Place the drained meat into the mixture and make sure that all the pieces are thoroughly coated with it.

5. Once coated, move the meat to an oven dish/baking tray that has been lightly coated with oil.

6. Put the meat in the oven and turn over every ten minutes or so, making sure to stab it with a fork so that the natural oil of the meat can come out as well as the blood. Once the meat is a lovelt golden brown, make sure that it is properly cooked inside and if it is, you may remove it from the oven.

7. Serve with rice and/or vegetables

**NB**

The garlic/garlic salt and/or herbs add a fuller and more tantalising flavour to the meat but they are not essential.
